To use, place plastic film on both sides before placing the masa on the surface. A grocery store produce bag, cut open, works well.
Extra tip: Portland-based Three Sisters Nixtamal makes super delicious masa sold in small bags in the refrigerated section, although it costs much more than mixing your own from a big bag of dry masa.
